English Style Scone

Ingredients:

  1. 170g all-purpose flour

  2. 4 tsp baking powder

  3. 1/2 tsp salt

  4. 55g brown sugar

  5. 90g unsalted butter

  6. 60ml milk

  7. 1 large egg

Instructions:
- In a food processor, pulse the flour, baking powder, salt, and brown sugar a couple times to combine
- Add the butter until the butter is completely distributed. The mixture should have a sandy texture to it.
- In a small bowl, whisk to combine the milk and egg.
- Stir to combine with a spatula, until a rough dough forms.
- Transfer to a lightly floured countertop and knead.
- Roll the dough about an inch thick and use a cutter to cut about 8 to 10 circles.
- Place the scones onto a parchment or silicone mat lined baking sheet and brush the tops with the reserved egg wash.
- Baked the scones for 12 minutes (180C), until about tripled in height, and golden brown on the tops and bottoms, Enjoy!

4” CHOCOLATE LAYER CAKE

Ingredient

  • 100g Brown sugar

  • 70g All-purpose flour

  • 25g Chocolate powder

  • 1/2 tsp Baking powder

  • 1/2 tsp Baking soda

  • 1/2 tsp Salt

  • 1 Egg

  • 1/4 cup Milk

  • 2 tbsp Vegetable oil

  • 1 tsp Vanilla extract

  • Frosting - same as carrot cake

Instruction

  1. Mix all the dry ingredients, then add egg, milk, oil and vanilla. Beat on medium speed of mixture for 2 minutes.

  2. Bake 15 minutes at 200C.

  3. Decorate the cake once it’s completely cool.

MERINGUE COOKIE

These Meringue Cookies are sweet, crispy and as light as a cloud. Taste like crunchy marshmallows.

Ingredient

  • Egg white (30g , appx. 1 medium sized egg)

  • Brown sugar (30g)

  • Vanilla extract ( 1 tsp)

  • M&M mini egg

Instruction

  1. Whisk the egg white, add the brown sugar gradually and beat on high speed until stiff peak form.

  2. Mix in Vanilla.

  3. Scoop the batter into a pipping bag (this recipe yield 4-5 meringues).

  4. Bake for 60 minutes at 85C.

  5. Peel off the meringues when they’re completely dry and crispy then top the mini eggs.

Tips For Perfect Meringues:

  • Do not stop beating until you have really stiff peaks. Brown sugar might take longer time to achieve it.

  • Brown sugar also gives a light-caramel or brown hue & a deep, caramel or toffee-like flavor due to the added molasses.

  • The ratio of ingredient is KEY - 1 Egg white : 1 Sugar .

  • Do not over prepare the batter, one batch at a time.

  • Store them in an air-tight container, and avoid any direct sunlight. Do not keep them in the fridge.
